This is the first article we’ve ever written where we can share the fact that Boris the Boar is soon to emerge as a star of the story. We’ll be back to Boris in a bit, but first let’s start our Sentinel shout-out to the newest addition to our local business community, namely Pat’s Pigs BBQ & Catering (Pat’s Pigs Catering LLC). Patrick Roache is the proprietor and roast master of this must-visit dining destination located at 5 Assembly Drive in Mendon. If you turn onto Assembly Drive from Pittsford-Mendon Road, it’s in that strip immediately to your right at the former location of Mark’s Pizzeria.

Pat, who grew up on Buggywhip Trail, is an ’07 HF-L grad, and has over 15 years of experience in the finest restaurants, ranging from Rochester to Denver. To outline his progression of success, he has been cooking pigs for 8 years, catering for 5 years, and operating his food truck for 2 years, all of which has culminated in the opening of his own restaurant in May.

After spending some time at St. Bonaventure, Pat ventured out to Boulder, Colorado where he spent a couple of years as a self-described “ski bum.” He then returned home to Mendon and started to pursue a 2-year degree for Mechanical Engineering at MCC. After that, he begin a porcine career in pig raising. At that point he was raising animals that he would sell to other food outlets. Now that scenario has flipped as he is more involved in his retail outlet and catering business and he now buys all of his meat from the trusted farming outfit at Shale Spring Meats in Lyons. That’s where he bought his original breeding stock, raising the same breed of pig that he raised when he was in that part of the business.

We thought we would share with you one funny story that came up during our interview… “One time when I was about 27 years old and raising pigs,” Pat told us, “I went to leave the pig pen and Boris the Boar bit me right in the ass. His mouth was so big that he was literally able to latch on to my entire cheek.” We received a confirmation from Pat’s mother that it was truly the funniest pig story she had ever seen.

While we strongly suggest you pay Pat a visit in person, we also want to stress the significance of the catering component of this culinary operation. “I am excited,” Pat said, “to present my vision of the perfect pig roast, food truck and catering experience to you and all your guests.” Pat’s Pigs is an excellent choice for your backyard bash, graduation party, or your special day of any kind!

Pat’s food truck is available for both private and corporate events while serving up authentic BBQ cuisine! The menu includes pulled pork, sausage, brisket, ribs, smoked wings, plus a variety of sides.
